Heat 2/5 cup sugar in a frying pan over high heat. Cook until lightly brown in color. Add in raisins and water. Toss to evenly coat. Set aside.
In a bowl, combine the eggs and 1/4 cup sugar. Whisk until light and fluffy. Add in the vanilla oil, cinnamon and brandy.
Sift in the cake flour, almond flour and baking powder and fold in. Mix in the melted butter. Pour mixture on top of the apple mixture.
Cover and cook over medium heat for 3 minutes. Decrease heat to low and continue cooking for another 30-35 minutes. It's done when a toothpick inserted comes out clean. Enjoy with a simple yogurt sauce made by combining equal amounts of yogurt and cream.
